Because Turkey Red wheat is a very old, non-hybridized variety, its gluten structure may be easier for people with gluten intolerance (non-celiacs) to digest.
Our Turkey Red flour is stone ground right here on our farm. There is nothing added and nothing lost in the milling process. When we say 100% whole wheat, we mean you get all the bran, all the germ and all the endosperm from the nutritious wheat berries.
Allergy alert: May be prepared in an area that also contains milk, egg, fish, crustacean shell fish, tree nuts, peanuts, soybeans and wheat and wheat gluten.
Packaging, shipping and storage
Packaging: We grind your flour just prior to shipping, seal it in a zip-lock freezer bag and enclose it in a paper bag which we then sew shut.
Your flour is milled just prior to shipping, so it will be very fresh when you get it. Because whole wheat flour contains the oil-rich germ, it can go rancid over time if stored incorrectly. We recommend you squeeze the air out of the freezer bag and store the flour in your refrigerator or freezer.
